In an effort to eat more healthy, I decided to start challenging myself, one meal at a time. For some reason, lunch always seemed the most difficult for me to pull together, especially with several littles who were ready for nap time after a busy morning. I was usually ready for nap time, too!
For one week, I challenged myself to make a real-food lunch for my children. At first it felt intimidating, but with preparation and planning, I met my goal! Back then, this meant:
- no fast food
- no spaghetti rings or other heat and eat meals
- no frozen mystery meats
- no bologna or typical cold-cut sandwiches
While intimidated, I managed to come through with several new recipes and ideas that will stay around our kitchen for years to come.
