After a few months, I’m getting the hang of following the THM plan. I like how I feel, and I also like knowing that I can have a cross-over or cheat snack and not end up with an extra ten pounds or feel that I’ve set myself back.
I love the ease of a chocolate MIM, and while this recipe took more time to put together, it was worth it! At first I wasn’t sure what to expect, especially since the muffin part appeared dryer than the chocolate MIM I’ve become accustomed to. But what a pleasant surprise! With the cream cheese topping, I felt I was eating a decadent, full-of-flavor cupcake from a fancy cupcake shop, except I didn’t suffer from a sugar crash afterwards nor did my wallet feel empty.
Speaking of the cream cheese topping, I recommend making it smoother than I did, but this nursing-mama-to-an-exclusively-breastfed-9-month-old was hungry and ready to eat. See? I told you I had a good excuse! I’m sure all of the other nursing mamas can relate to my haste.
Ingredients for the muffin:
- 1 egg
- 2 Tablespoons of ground flax meal
- 1 Tablespoon of coconut flour (or can substitute with 2 Tablespoons of almond flour)
- 2 Tablespoons of lime juice
- 1 Tablespoon of butter
- A pinch of salt
- 3 Dashes of NuNaturals Stevia (or equivalent)
- 1/2 Teaspoon of baking powder
- Dash of key lime extract (or may substitute with lemon extract)
Ingredients for the frosting:
- 1 Tablespoon of low fat cream cheese
- 2 Tablespoons of Greek yogurt
- 3/4 Teaspoon of vanilla extract
- 3 Teaspoons of Truvia (I used THM Sweet Blend)
For the muffin, crack an egg into a mug (or a bowl) and whisk. Mix muffin ingredients together in the mug (or bowl) until well blended and microwave for 50 seconds. (Longer if needed, depending on microwave settings.)
For the frosting, mix together cream cheese, Greek yogurt, Truvia (or THM Sweet Blend), and another dash of key lime or lemon extract. Blend well and drizzle over the muffin. I recommend blending the frosting until it’s completely smooth, although I didn’t have any complaints as it was. I even thought the frosting could work well on its own, as a dessert or pudding.
