I love quinoa! I could eat it morning, noon, or night.
My daughter made this absolutely delicious quinoa dish for breakfast last week. She even had to get on to me for eating it straight from the pan.
- 1 cup quinoa, dry
- 1 1/2 cups of water
- 1 teaspoon of cinnamon
- 1 1/2 teaspoon of vanilla
- 1/2 cup of unsweetened applesauce
- 1 cup of unsweetened almond milk
- 1 apple, diced
- chopped pecans
Combine quinoa, water, cinnamon and vanilla in a small saucepan and bring to a boil. Reduce to a simmer, cover, and let cook for 15 min until quinoa can be fluffed with a fork. (It was at this point when I started digging in.)
Stir in apple sauce and pour in almond milk. Top with fresh cut apples, pecans and a dash of cinnamon.
Absolutely delicious! The recipe states that it serves 4-6. This made enough for my 5 older children to have a bowl, as well as myself.
