Meet my daughter, Moriah.
Moriah is 12 years old and is second in a family of 8 children. She lives on a dairy farm where her primary responsibility is helping her dad with the night milking. She also helps with feeding the calves.
For the past 6 years Moriah has raised and loved her 4H hogs. She has done well in her showmanship classes and in 2014 she was first in her show class and also placed in her division. She’s done many other 4H projects including dairy steers, cake decorating, scrapbooking and this year was privileged to represent her club at the state fair with her Adventures in Home Living project. This year she also serves as her 4H club’s president.
Because of her love of pigs, she decided to try out for the position of pork princess. After completing the application and an interview, she was thrilled to be chosen to represent our county’s pork industry. She has enjoyed the parades and festivals and getting to know other royalty, but her favorite activities by far have been those opportunities to interact with children and to encourage them to strive for excellence.
…
What inspires you? For 25 years the pork industry slogan was “Pork: The other white meat.” It turns out that according to the USA Department of Agriculture, pork is not a white meat.
So on March 4, 2011 the slogan was changed to “Pork: Be Inspired.” As the 2015 County Pork Industry Princess, I am inspired by my desire to teach young children about pigs, and where their Christmas ham comes from. To do so I have done several library programs, and I have gone to several festivals where I have done a couple small speeches. I especially love the little girls.
They get so excited if I wave at them, and even more excited if I talk to them. Something else that inspires me is healthy eating. Pork can be very fatty especially on cuts like bacon. However, pork can also be very healthy and lean. Just three ounces of pork contains iron, magnesium, zinc, potassium, and many other vitamins that our bodies need to stay active and healthy.
A good website to find delicious pork recipes on is www.porkbeinspired.com .To find healthy recipes, click the recipes button, and then click health conscious, and some great and healthy pork recipes will come up.
Here is one of my favorites:
Pork Fajitas
(It is best to buy locally raised and processed meat. It tastes better and is healthier)
- Any lean cut of meat. (Boneless works best. Includes, boneless top loin chop, boneless top loin roast, center loin, and pork tenderloin.)
- 2 veggies of your choice. (peppers and onions are really good)
- Fajita sauce(seasoning packets work well, made according to package directions)
- Flour tortillas
- Olive oil ( you can also use vegetable oil, but it’s not as healthy)
- Skillet (electric or stovetop. Both work)
Directions
Cut pork into bite sized pieces. Mix with fajita sauce and allow to marinate for ½ hour or so. Heat oil in skillet. Cut up the veggies, also in bite size pieces. Pour the meat and sauce into skillet. Cook for about 10 minutes on medium or until almost done. Add the veggies and cook until they are done. Spoon onto tortillas and serve. Sour cream is optional. Enjoy!
It has been an honor for me to share my experience with you, and I thank you for your time.
