Looking for a grain-free and gluten-free treat? I found this recipe a while back, tweaked it a little, added a few bits and pieces, and it’s become a favorite.
I love coconut, so this recipe calls for both coconut oil and coconut flour! It also uses carob instead of chocolate, and if you don’t like carob, you can easily substitute with chocolate. 🙂
Wet Ingredients:
- 1/2 cup organic, unrefined, virgin coconut oilÂ
- 3/4 cup maple syrupÂ
- 2 eggsÂ
- 1/2 tsp vanillaÂ
Dry Ingredients:Â
- 1/3 cup of carob powderÂ
- 1/4 cup coconut flourÂ
- 1/2 tsp baking powderÂ
- 1/2 tsp baking sodaÂ
- 1 cup carob chipsÂ
- 1/2 cup chopped walnuts (optional)Â
1. Preheat oven to 350 degrees.
2. Mix together coconut oil and maple syrup
3. Add eggs one at a time, beating well after each one.
4. Add vanilla extract.
5. In another bowl, sift carob powder and coconut flour. Add baking soda and baking powder.
6. Stir flour mixture into wet mixture and mix until combined.
7. Stir in carob chips.
8. Pour into a greased/oiled 8×8 or 9×9 pan.
9. If using chopped walnuts, sprinkle them on the top before baking.
10. Bake for about 30 minutes.
11. Cool completely before serving.
While the sides were nice and chewy, the middle was a bit crumbly, but my children enjoy breaking up their brownies anyway, so this isn’t an issue for our family.
