The Hidden Healthy Ingredients in the Chocolate-Cherry Mocha
You can tell by the name of this recipe that there’s definitely chocolate and cherry in it; however, it also calls for what I call two hidden ingredients: zucchini and peanut flour. Zucchini is such a versatile vegetable. I’ve used it as a simple side dish, diced and sautéed. It’s also yummy baked into chips or made into spaghetti noodles. And it’s also blended in the chocolate-cherry mocha.
Zucchini
Zucchini is said to be high in antioxidants, which is why it’s used in folk medicine to help treat colds, aches, and various health conditions. Although not all of its uses are endorsed by science, here are a few benefits that are:
- Nutrient rich in protein, fiber, vitamin C, potassium, magnesium, vitamin K, and vitamin B6.
- Contributes to healthy digestion.

Peanut Flour
When it comes to peanut flour, we’re talking an excellent source of niacin combined with heart-protecting qualities. In addition, peanut flour is a great source of potassium and an excellent source of magnesium, which are two nutrients that help maintain normal blood pressure.
Peanut flour is known to add flavor and can also be used as a flour alternative in gluten-free breads and baked goods. In our case, it’s the perfect healthy and flavorful addition to the chocolate-cherry mocha!
How to Make It
Making this yummy drink is super easy. You only need a few ingredients, a blender, and you’re all set. The recipe calls for frozen zucchini which you can buy pre-frozen at the store, or simply purchase fresh zucchini, chop it and store it in the freezer until you’re ready to use them. As for the cold coffee, peanut flour, and cherry flavoring… they can be picked up at the local grocery store as well.
