I am going NUTS at the moment because I cannot post any pictures of what we’re doing. I’m hoping to get things taken care of this week. We’re finally settled in from our vacation and getting back into the swing of things. π Hopefully pictures will come soon!
I tried a new recipe today and Andrew said all the way home from church, “I’m really nervous about this chicken. I’m sure it’ll be great, but I’m still nervous.”
Here’s the recipe for today’s meal. Because it’s one of my freezer meals, it’s something that can be prepared ahead of time. The benefit to freezer meals is that afterwards, we have enough cooked meat for 2 more meals. Each freezer meal in my freezer contains 3 pounds of meat and I divide the leftovers into 2 cup portions (although sometimes I will divide into 1 cup portions, depending on the seasoning I use).
To assemble the freezer pack, I used
1) 3 pounds of organic boneless, skinless chicken breasts
2) 1 cup of water
3) About 6 Tablespoons of a Chipotle Seasoning (you can use whatever you like–just make sure it has that “smoke house” aroma to it.)
4) 1 entire jar (at least 10 oz.) of organic, sugar-free Red Raspberry Preserves
In a gallon sized freezer bag, I put in all the above ingredients, had Morgan squeeze the bag to her heart’s content to make sure it was well mixed and labeled it with instructions. In this case, I decided the crock pot would be best, so I wrote on the label to put in the crock pot for 4 to 6 hours on high and also included ideas for side dishes (broccoli and fruit), as well as how it should be divided (2 cup portions) after the first meal.
So this morning, I defrosted the freezer meal, dumped it all into the crock pot, set it for 6 hours and off we went to church.
When we got home, the meal was fantastic! The house smelled great, too! I grabbed a loaf of bread (I bake several loaves of dinner breads at a time and then freeze them, so they only need to thaw), steamed some broccoli, cut up some fruit, and lunch was done!
Afterwards, I shredded and froze the leftover chicken in 2 cup portions, which are in labeled bags for future meals. Since the meat is already seasoned, I have lots of options. I can serve the meat with pasta, rice, or make sandwiches. YUM!!!!!!!
The whole family loved this chicken and the cool thing is that it fits that “whole foods” model. π
