Italian Veggie Pizza
Carrots, squash, and broccoli as pizza toppings? Yep and it was sooo good! I sauteed summer squash, onions, green peppers, carrots, and broccoli. The recipe also called for mushrooms and olives, but I forgot about them until afterwards. For the cheese, I blended parmesan and mozzarella in a bowl and mixed with 4 tablespoons of basil and garlic powder.
Carob and Almond Banana Chunks
If you like chocolate and nuts, this is awesome! And unless my 3 month post-partum brain isn’t thinking clearly, this should easily fall into the raw food category (which is especially great).
These were made with bananas, raw honey, raw almonds, carob, and then frozen to perfection. These didn’t stay around very long, especially once Andrew got a taste of them. If you like snickers or any kind of chocolate/nut combination, this one is great!
Chicken Strips
Here they are! I made chicken strips! I took some cut up chicken breasts, marinated them in egg whites for 15 minutes, and then coated them in a breading made of wheat germ, almonds, ground flax seed, oat bran, pepper, and salt. The kids really liked these, and it felt good to give them something with lots of good EFA’s and that wasn’t deep fried.
Berry-Banana Smoothie
“Mama, you finally got a smoothie right!” Morgan hasn’t been a fan of smoothies. But this one was a hit. It’s made with frozen blue berries, bananas, yogurt, rice milk, and lots of ice cubes.
Ants on a Log
No picture of this, but who doesn’t know what ants on a log looks like? The kids could make this themselves and when I got the camera, I returned to find a completely empty plate. My little lambs adore celery and anything on it. :)Ingredients: celery, almond butter, raisins
We also had a granola bake, a breakfast cooked in the crock pot, as well as a crock pot oatmeal. There were a few other good meals but I’ll have to wait until my camera card makes it home. π
